My holding bin will only display a maximum temperature of 135 degrees. Why can't I increase the temperature?

The holding bin is currently reading the temperature in degrees Celsius. To change the display to Fahrenheit:
Turn the unit off
Press and hold the up arrow on the temperature display
Turn the unit on, wait 3 seconds and release the up arrow
The display will briefly flash "F" and the unit will display temperature in Fahrenheit
Note: Holding the down arrow during this process will change the unit from Fahrenheit to Celsius

The temperature of my dedicated holding bin does not match what the display reads. What is wrong?

Verify that you are taking a surface temperature reading of the heaters, and not an air temperature reading. Prince Castle dedicate holding bins use infrared heaters so the food will stay hot, but the air temperature in and around the bin stays much cooler.
Verify that you are taking the temperature reading of the correct heater. Each shelf of the holding bin has two heaters. The upper heater of a shelf is the ceiling of the shelf. The lower heater is the floor of the shelf. Surface temperatures should be read at a point 10 inches from either side of the bin and two inches in from the edge.
Verify that the unit is reading in the correct degree of measure. The dedicated holding bins will read in both Celsius and Fahrenheit. To set the holding bin to degrees Fahrenheit, turn the holding bin off. Press and hold the Up Arrow button on the Temperature display. Turn the unit on. Wait 5 seconds and release the Up Arrow. The display will briefly flash "F" in the display and then change to read the current temperature. To set the holding bin to degrees Celsius, turn the holding bin off. Press and hold the Down Arrow button on the Temperature display. Turn the unit on. Wait 5 seconds and release the Down Arrow. The display will briefly flash "C" in the display and then change to read the current temperature.
If you verify all of the above, and the surface temperature reading of the heater(s) is drastically different from the temperature reading given by the display, contact your authorized Service Agent.
